All Goat’s Butter Shortbread

Using goat’s butter makes the perfect shortbread biscuit. Our All Goats’ Butter Shortbread are the perfect accompaniment to our Seasonal poached rhubarb.

Instructions

  1. Allow the butter to come up to room temperature. Preheat the oven to 190°C.
  2. Cream the butter and sugar, until smooth. Add the orange zest.
  3. Sieve in the flour and gently bring the mixture together.
  4. Turn the mixture onto a lightly dusted work surface and roll the dough until 1cm thick. Cut into rounds or fingers if you prefer and place on a lined baking tray.
  5. Dust with caster sugar and place in the fridge for 20minutes.
  6. Bake for 15-20 minutes until golden. Remove from the oven and allow to cool on a wire rack.
