Banana bread with chocolate chips

Name a better way to spend a rainy afternoon than baking this cosy and scrumptious recipe! If you want to make it extra tasty we recommend adding a small handful of chopped up walnuts.

Instructions

  1. Heat the oven to 180C/160C fan/gas 4. Line a 900g loaf tin and set aside.
  2. Beat the softened butter and sugar together until light and fluffy. Add in the egg and vanilla extract, a little at at time, mixing between each addition.
  3. Fold in the flour, a pinch of salt, the baking powder, mashed banana and all but a handful of the chocolate chips (add in walnuts here if adding).
  4. Scrape the mixture into the prepared tin and scatter over the rest of the chocolate chips. Bake for about 50 mins, or until puffed up and cooked through
  5. Leave to cool
