- Put the flour in a bowl and stir in seasoning.
- Make a well in the middle of the flour, break eggs into it.
- Beat the eggs, gradually bringing flour in from the sides of the well.
- Beat in the milk.
- Put a nob of fat into each tin used.
- Add the dripping or lard to your pudding tins and heat at 220C (425F) Gas 7 for about 4 minutes until very hot.
- When the fat is hot, pour the batter in. Return to oven and cook for 15 to 20 minutes.
