  1. Grate the cucumber on the large holes of a grater. Squeeze out as much moisture as possible over the sink to make sure the Tzatziki will be creamy and not watery.
  2. In a bowl, mix together the yogurt, cucumber, garlic, olive oil and lemon juice. Season to taste and garnish with fresh dill if using.
