Roasted root veg with Garlic Yogurt

We find this goes perfectly with roast lamb, or even a veggie side at a bbq! Easy to make in the oven or airfryer.

Instructions

  1. Preheat the oven to 200ºC/gas 6. No need to preheat if using airfryer.
  2. Wash carrots and parsnips then slice them length ways, with the skin on.
  3. Add to baking tray. Cover evenly with the oil, thyme. sugar and salt and pepper. Roast in the oven for 40 minutes, (if using airfryer, roast at 200c for 10 to 15 mins) or until the veg is tender.
  4. Whilst the veg is roasting, mix together the garlic, lemon, yogurt and half the mint in a bowl and place to the side.
  5. Once the veg is out the oven, either leave the yogurt dressing to the side to dip in, or mix together. Add the rest of the shredded mint on top.
