Orange Rice Pudding

  1. Wash and drain rice.
  2. Grease a 1.5 litre oven proof dish with all the butter, stir together milk, rice, sugar and orange rind.
  3. Sprinkle with nutmeg.
  4. Bake at 150C/ Fan 130C/Gas Mark 2 for approx. 2 hours until thick, creamy and golden brown on top.
  5. Serve topped with sprinkling of orange rind.
