Instructions
- Preheat the oven to 200°C/gas mark 6.
- Put the salmon and peppers into a large roasting tin. Mix the Fajita seasoning with a teaspoon of oil and rub the mix onto the salmon and pepper.
- Roast for 20 minutes until golden.
- Remove from the oven and add the tomatoes, beans and goats cheese to the dish. Place back in the oven and cook for 5 more minutes, until the salmon is cooked through.
- Scatter over the avocado and fresh coriander and serve with lime wedges to squeeze over.
- Delicious served with warm flatbreads.
