The only lemon curd recipe you need. Once you start making your own you won’t want  to go back to shop bought! Perfect to add to any lemon recipe, or just to have on toast!

  1. Whisk together lemon zest, juice, sugar and eggs in a heatproof bowl. Cut butter into small cubes, then add to lemon mixture.
  2. Place the bowl over a pan of gently simmering water. Stir frequently until butter melted and then occasionally until mixture has thickened 15-20 minutes.
  3. Allow to cool
