  1. Add the oil, ginger, salt, pepper. onion, pepper, carrots, jalapeno, parsley, mustard seeds and curry leaves to a frying pan, and lightly fry for a couple of minutes till fragrant.
  2. Add in the yogurt and mayonnaise into a bowl, and then add in the cooked mixture, stir. Keep in the fridge till ready to use.
