  1. Rub the butter into the flour, salt and baking powder.
  2. Stir in the sugar and flaked almonds.
  3. Beat together the egg and essence.
  4. Mix into crumb mixture to form a soft dough, if it is a little dry add a little milk.
  5. Roll into balls of approx 25g (1oz) in palm of hand and press to approx 1cm ½“ thick.
  6. Put on lightly oiled baking sheet and bake at 170C (325F) Gas 4 for 15 minutes or until just brown.
