Airfryer – Stuffed Peppers

Instructions

  1. Spray a large pan with cooking oil, over a medium-high heat. Add the onion and cook for a few mins to soften. Add the garlic and beef, and cook until the meat is browned – break it up with a spoon as it cooks. Add the tomatoes, seasoning, stock cube and ketchup. Give everything a good stir and cover with a lid. Simmer.
  2. Meanwhile, halve the peppers and scoop out the seeds and white membrane. Place cut-side up in a air fryer, season, set to 200c and cook for 8 mins, or until soft.
  3. When the mince is cooked, divide it between the softened peppers. Sprinkle the cheese on top, return to air fryer for 5 minutes, or until the cheese is melted. Add basil leaves and serve.
