Instructions

  1. Grease and line a 20cm x 30cm pan with baking paper.
  2. Place milk, cinnamon and lemon rind in a medium saucepan and bring to a simmer over medium heat.
  3. Whisk eggs, yolks, caster sugar, cornflour and vanilla in a large bowl until well combined. Strain milk mixture over egg mixture and whisk until combined. Discard cinnamon sticks and rind.
  4. Return milk mixture to a cleaned medium saucepan. Cook, stirring constantly, over medium-low heat for 5 minutes or until mixture bubbles and thickens.
  5. Pour milk mixture into prepared pan and smooth top. Cool completely and place in fridge for 3 hours or until firm.
  6. Turn milk mixture out onto a chopping board. Cut into 3.5cm squares. Coat each square in flour, shaking off excess.
  7. Spray the basket of the air fryer with oil. Add some milk squares to fryer and spray with oil. Cook on 200C for 10 minutes or until golden. Repeat with remaining milk squares.
  8. Sprinkle milk squares with cinnamon sugar (mix equal parts of cinnamon and sugar in a bowl)
  9. Enjoy!
