Air Fryer chicken tacos

Easy, quick and good for you; these air-fryer chicken tacos are a staple weekday meal that the whole family can enjoy.

Veggie? Swap the chicken for cauliflower!

Instructions

  1. Combine breadcrumbs, seasoning and lime rind in a bowl. Season with salt and pepper. Whisk eggs in a separate shallow bowl. Place flour in another bowl. Cover chicken in flour, then dip in egg. Cover in breadcrumb mixture to coat evenly. Place on a plate. Spray chicken with oil.
  2. Place chicken on rack in air fryer. Cook at 180C for 20 minutes, or until cooked through and golden.
  3. Put taco shells, upside-down on racks in the air fryer. Cook at 180C for 1 minute, or until heated through.
  4. Top your shell with the chicken, salad of your choice, some salsa, guacamole and top it off with some creamy St Helens Farm Yogurt, or for an extra treat add some St Helens Farm Cheese. Enjoy!
