  1. Pat the chicken dry. rub the butter into the skin making sure it is all covered. cover the chicken in the seasoning.
  2. Set air fryer too 200C. Cook face down for 25 minutes. Then, use two forks to flip the chicken and cook for the further time, if 1.2kg chicken it should be a further 25 minutes, double check the weight and timing of yours; you don't want to over cook it and it be dry, yet under cook and it be raw! It should be 75C in the centre to be fully cooked.
  3. Rest the chicken for 10 minutes before serving.
