Instructions

  1. To make the caramelised onions, heat the olive oil in a large frying pan on a low heat. Add the onions and a pinch of salt, stirring every so often to not catch them. Make sure you keep it on a low heat as you want them to be soft and not crispy.
  2. Once the onions are softened, add the sugar and balsamic. Continue cooking on the low heat for 5-10 minutes, until caramelised. Place to the side for later.
  3. For the burgers, in a bowl mix together the beef mince, cucumber, egg yolk, dijon mustard, salt, pepper, mixed herbs, oregano, worcester sauce and breadcrumbs until combined. Divide into 4 or 5 patties.
  4. Heat the oil in a heavy based frying pan, fry the burgers for 3 minutes (medium) to 5 minutes (medium well) on each side.
  5. Tip to melt the cheese, add the cheese on top of the burger whilst still in the pan, add a pan lid on top.
  6. Add the burger to the bun with a big dollop of caramelised onions, alongside any other toppings of your choice.
