Goat’s Cheese and Onion Soup

  1. Melt the butter in a pan and gently fry the onions and celery without browning.
  2. Add the four and cook for 1 to 2 minutes. Gradually beat in the milk, stock and seasoning.
  3. Heat, stirring continuously until the soup boils and thickens.
  4. Simmer for 5 minutes
  5. Remove from the heat and stir in grated cheese.
