Festive Rice Pudding

Instructions

  1. Place milk, coconut, spices in a saucepan and heat until coconut has dissolved
  2. Stir in cranberries, rice and sugar.
  3. Bring to the boil, then simmer for 30 minutes or until rice is tender.
  4. Pour into serving dish and sprinkle a few cranberries on top.
