Instructions
- Cook the potatoes Place the chopped potatoes into a saucepan of salted water. Bring to the boil and cook for around 15–20 minutes, or until soft and easily pierced with a fork. Drain well.
- Make the mash Mash the potatoes with the goat’s butter and a splash of goat’s milk until smooth and creamy. Season with salt, pepper, and a pinch of herbs if using.
- Add the cheese Stir the goat’s cheese into the hot mash until melted and fully combined, creating a rich and tangy mash.
- Cook the bacon In a frying pan over medium heat, cook the chopped bacon until golden and crispy.
- Assemble the bake Spoon the crispy bacon into the base of a pie dish. Top evenly with the creamy goat’s cheese mash.
- Bake Bake in a preheated oven at 200°C (180°C fan) for 20–25 minutes, until the top is lightly golden.
